With an excellent variety of dishes based on meats, fish and shellfish, accompanied by vegetables and fruits from the local valleys, the restaurants of this region have the conditions to offer, to their inhabitants and tourists, a wide gastronomic offer to satisfy the most demanding palate.  
 
Besides finding the traditional Chilean and international dishes, we must point out the mixture of flavours that there are in some restaurants, where one can appreciate the influence of Peru, Bolivia and Colombia. 

A must do, while in Arica, is to experience the wide selection of seafood, delicious shellfish patties, mouth watering ceviches (fish cured with lemon juice), oysters, octopus and different types of yummy fish.

The region of Arica - Parinacota has excellent products exported to diverse countries throughout the world.
 

The main exporting companies are located in the valleys of Azapa and Lluta.

Olives of Azapa
The olives grown in the Valley of Azapa, are well known worldwide, for their size and quality. 

At this moment, we are exporting the black and green variety. Olive paste and extra virgin oil is also an evermore-popular product.
     
 

Cocktail and fruit liquors
There are many varieties from which to choose, like mango, guayaba (guava) and maracuya (Passion fruit).

Olive oil
Fresh and dehydrated tomatos
Peppers
Paste of garlic, paste of jengibre
Oil and salt meat anchovies, fillets and trunks of anchovy, paté of anchovies.
Big holes to ajillo and in sauce of tomatos, spider crabs.
Cooled and congealed fresh fish like: congrio gilded, merluza, reineta, shark and jurel.
